Ever been stuck on what to cook for dinner? We’ve all been there. Sharing my favorite chicken tacos recipe to help you over the dinner hump. It is simple and packs so much flavor, you will not be disappointed.
Cooking is one of my favorite things to do, however I am always finding ways to make quick and easy dinner meals with minimal prep. This quick and easy oven chicken taco recipe is one of my go to meals and my family enjoys it so much that we have it on heavy rotation. It is versatile and taste so good as leftovers too. With Cinco De Mayo coming up, I thought it will be a great time to share one of our family favorites.
3 Tips for the perfect Taco Recipe
Making sure your vegetables are fresh is important. The juices from the veggies infused with other ingredients makes for perfect blends of flavor which is optimal for your tacos.
I typically go for the boneless, skinless chicken thighs when making chicken tacos. I prefer dark meat in general and the thigh provides a good mix of white and dark meat that is juicy and flavorful. You can always use white meat or chicken breast as well.
Finding the perfect seasoning is one of the major makes or breaks for the perfect chicken taco recipe or any taco recipe for that matter. While there are many delicious store-bought chicken taco seasoning mixes available. I prefer to make my own chicken taco marinade. I use this taco seasoning recipe as a base for a lot of my Tex Mex recipes such as ground beef tacos, fajitas, as well as chili with taco meat.
1 tbsp. Chili Powder
1 tsp smoked paprika
½ tsp crushed red pepper flakes
½ tbsp. dried oregano
1 tsp garlic powder
1 tsp onion powder
1 tsp cumin
1 tsp pink himalayan salt
½ tsp ground black pepper
2lbs of chicken thighs
3 bell peppers of choice
1 medium red onion
3 tsp taco seasoning – see end of post for recipe
3 TBSP Olive Oil
Salt and pepper to taste
Cilantro and fresh lime for garnish
Corn or flour tortillas
For Guacamole (Optional)
2 ripe avocados
Pico de Gallo (this recipe is my favorite)
How to Make Perfect Chicken Tacos
Cut chicken thighs into strips and marinate with taco seasoning and 2 tbsp olive oil for at least 30 minutes. I usually have mine marinate overnight.
Preheat oven to 420F and cut your bell peppers and vegetables into strips. Grease cookie sheet with 1 tbsp of olive oil. Mix veggies in with marinated chicken. Place on pan and bake in oven for 40-45 mins.
If using soft tacos, warm in oven along with chicken for about 10 mins and place in tortilla warmer or foil to keep warm. We love corn tortillas and use a mix of soft and crispy taco shells.
Step 4 (optional)
While chicken is baking, mash your 2 ripe avocadoes in a bowl. Squeeze in juice from ½ lime wedge and add your Pico de Gallo.
Once chicken is done and no longer pink, let cool for 5 mins and enjoy with garnishes of your choice which can include, salsa, sour cream or crema, queso, pico de gallo and lime juice for extra flavor.
